What is Hard Kombucha?
Hard kombucha is also referred to as alcoholic kombucha is the alcoholic version of kombucha. It’s a fermented tea drink made from tea, sugar, and live cultures. By infusing a spirit or extending fermentation, more sugar is converted into alcohol, giving hard kombucha an ABV of around 4–6%, similar to beer or hard seltzer. Unlike beer, it’s brewed without barley or wheat, making it naturally gluten-free and lighter in calories
How is Hard Kombucha Made?
It starts with the same base as regular kombucha: brewed tea, cane sugar, and a SCOBY (symbiotic culture of bacteria and yeast). During the first fermentation, the cultures consume the sugar, creating natural fizz and acids. To turn kombucha into hard kombucha it is either infused with a spirit or uses a second, longer fermentation, which produces a higher level of alcohol. The result is a crisp, slightly tart drink that can be flavoured with fruit or botanicals.
Every brand of hard kombucha has its own process. Some go for a dry, wine-like finish; others lean into fruity notes. Most hard kombuchas range between 4% and 6% ABV. Some brands push higher, up to 8–10%, but that’s less common.
